Warm winter vegetable quinoa salad

Cool quinoa 

Cool it a bit (just bring it to room temp)
Dressing
Soy sauce
Sesame oil
Champagne vinegar
Pepper
Salt
Mirin 
Minced ginger
Olive oil 
Roasted veggies – chop carrots, parsnips, cauliflower, sweet potato and toss it in olive oil, salt and pepper, then roast at 400 for 30ish min. 
Toss everything together and garnish with  coriander.
