Quinoa breakfast bites

Make 1/2 cup quinoa and let it fluff and cool down.
Cut up lots of veggies 🙂
I had carrots and asparagus (I steamed them for 10min to cook), red pepper, yellow pepper, zucchini, spring onions and corn.
Beat two eggs with salt and black pepper
Grate some jack cheese or mozzarella or whatever cheese you want to put in this.
Chop some fresh basil for flavor
Mix everything together and scoop into well oiled tin muffin pan.
Bake at 350 for 25 min.
Let the muffins cool in the pan for 10min and then scoop them out.
Ready 🙂
