Use the Mutton Curry Recipe from here http://shivikhullar.blogspot.com/2011/01/moms-mutton-curry.html and let it simmer, so the gravy becomes thick.
Now take an earthen pot, and brush it with oil inside.
Half cook 2 cups of rice.
Take some saffron and add it to warm milk (1/4 cup) and keep it ready
Slice onions really thin, put them on a baking sheet, sprinkle some oil on them, and broil them at H1 for 30-45 minutes. They should turn golden (not black)
Now take the pot and add a layer of mutton curry
Add a layer of rice to this.
Add the onions and spread over a tbsp of the saffron milk.
Now add another layer of curry, and follow the same procedure
I like Rice on the top most layer, with lots of onion on it, and top it off with some strands of saffron
Now seal the earthen pot (mine has a lid :))
And let it cook in the oven at 400F for 40 minutes.
Serve HOT and steaming with Raita 🙂
